Grilled Vegetable Hye Roller

  • 1 round Hye Roller Soft Cracker Bread
  • 3 oz of cream cheese
  • 1 zucchini thinly sliced and grilled
  • 1 eggplant thinly sliced and grilled
  • 1 red bell pepper grilled and sliced
  • yellow pepper grilled and sliced
  • ½ red or yellow onion sliced and grilled
  • 1 large portabella mushroom sliced and grilled
  • 1 ½ cups of spinach
  • 3 oz of crumbled feta (optional)


Grill vegetables with olive oil, garlic powder and herbs. Cover entire round of Hye Roller with cream cheese. Cover 3⁄4 of Hye Roller with spinach, then layer with grilled vegetables. Sprinkle feta over grilled vegetables. Roll up using the Hye Roller Wrap technique. Wrap Hye Roller in plastic wrap and refrigerate for later use or slice and serve immediately. Best when used within 24 hours may hold up to 48 hours.
